Label Reading

I tend to think of myself as a pretty savvy label reader. I always check the serving size first and the servings per a container second. I usually look at the sugar, protein, and fat content and skim over the micro-nutrients. Recently however Vitamin Water reminded just how sneaky advertising can be.

I was drinking a Vitamin Water Fruit Punch flavor which on the front of the bottle advertises to be full of B-Vitamins and Potassium (an electrolyte). I mostly just got the bottle because I like that flavor but I thought “electrolytes, okay cool”. Later I was bored so I started reading the ingredients section of the label. I was a little shocked to find that the drink contained “less than 1% potassium”. The front section of the label (you can see above) clearly makes a consumer feel they are purchasing a drink full of potassium which is going to help revitalize you. I could have got more potassium from eating a banana, or a class of milk, than from this Vitamin Water.

Now I’m not going around looking for ways to add more potassium to my diet I simply pointed this out because I know food/beverage companies can be very sneaky about what actually is or isn’t in their product. Always take time to the read the labels and the ingredients to know what you are putting in your body. The first ingredients listed are the most abundant in the product and they are listed in decreasing order from there. Remember you can’t always trust what is printed on the front of the package!

The Job Hunt

This week I am learning how hard job searching really is. I’ve been working part-time jobs since I was sixteen and those usually are not too hard to come by. But now that I am a just a few weeks out from graduation the pressure is really on to find a “real” job. I’ve been searching every job hunting data base known to man using every key phrase I can think of to find a job I might be interested in. The problem I keep running into is that everyone wants you to have “5 year management experience” or “3 years in a supervisory position”. I just want to reply back to all their e-mails “How I am supposed to get experience if you won’t even give me a chance!”.

Another problem that keeps coming to mind is how far from home am I really willing to move? Sometimes just packing up and moving far away sounds really exciting. Everyone also says your only young once, and this is really the only time in your life you’ll have the chance to just go wherever you want. But other times I feel like I would miss my friends and family here in Oklahoma too much.

I know God has a place a for me somewhere and I know that I just need to be patient and wait for the doors to open, but as everyone knows being patient is a lot easier said than done. For know I am just going to keep working my part-time job and sending my resume in. I’ll keep you updated on where I end up. And if you hear of any great nutrition jobs send them my way! ;)

Strawberry Salsa

Well blog readers, I’ve decided it’s time for us to take our relationship to the next level. Today I am going to share something very personal and dear to my heart with you. I’ve debated long and hard over whether I should actually post this on my blog or not, but I’ve come to the decision that I should. Today I am going to share one (of my 2) secret recipes with you.

The recipe is for strawberry salsa and it is the perfect spring/summer snack or appetizer. Not only is it delicious, but it’s perfectly healthy too! The best part is it fast and simple to make. Strawberry salsa is perfect on corn chips, rolled up in some chicken tacos, or even on a turkey sandwich.

Strawberry Salsa (makes 4 servings)

2 c diced strawberries
1/2 c chopped purple onion
1/2 c chopped fresh cilantro
1 jalapeño finely chopped
1/4 c fresh mint chopped
2 T olive oil
1/4 c balsamic vinegar

So try it sometime this spring, and please please let me know what you think!

Nutritionist vs Dietitian: Who Knows Best?

Everyone these days seems to think they are a nutrition expert. Every time you go to the store, turn on the television, or get on the internet there is a new way to loose weight, speed up your  metabolism, etc. Even when I get on Facebook there is usually someone giving their friend a nutrition lesson (that most of the time is incorrect). Eating is one of the few things we have ALL been doing since birth, and one subject we all have an opinion on. It also seems that many American’s are constantly searching for nutrition advice. Whether it be to lose weight or better their sports performance everyone is looking for secret nutrition tips. While I am all for loosing weight and healthy eating I think there are many misleading books and ideas floating around the world today. So who are you getting your nutrition advice from? Who should you be getting it from?

Many authors and/or speakers try to gain nutrition credibility by referring to themselves as nutritionists. What may be surprising to some is that there are no requirements that must be met before you can call yourself a nutritionist. That’s right, anyone of you reading this right now could start telling your friends you’re a nutritionist and no one could say you were wrong. There are no standards that must be met or classes that must be taken prior to making nutritionist your title. So next time you are reading a book or article written by a “nutritionist” just remember there is a very good chance they have little nutrition knowledge and are probably misleading you.

Dietitians on the other spend at least four years studying the science of nutrition. We know how every little gram of carb, fat, and protein is metabolized and stored in your body. We study a wide variety of nutrition settings like sports, clinical, community, and counseling. Dietitians are also required to complete 1200 hours of supervised practice before we are allowed to take the RD test. All RD’s are required to meet a certain number of continuing education hours every year in order to maintain their credentials. This means we are always up to date with new and relevant information to provide our clients. And lastly registered dietitian is the only nutrition profession that is recognized my medical professionals and insurance companies as accurate and credible.

So next time you are wanting to shed a few pounds or start eating healthier be aware of where your information is coming from. Make sure books or articles you read are written by an RD! If you want to find a RD in your area use this link  http://www.eatright.org/programs/rdfinder/

Summer! Summer! Summer!

Well I haven’t blogged in over 3 months because I’ve been having fun doing other things/busy with school. But I’m bringing the blog back because I finally have something exciting to write about!! (You have to wait till the end to find out!) But first here is a crash course to catch everyone up on what has been going on in my life.

1. First big thing…I graduated!! Whoo! I can now say I have a college degree! (B.S. in Nutritional Sciences-Dietetics to be exact). It still kind of blows my mind to think that I actually have a college degree!

2. After graduation six of my favorites people on this planet and I went traveled to Gulf Shores, AL (pre-oil reaching beach stage) and had one of the best weeks of my life! I love these girls so much! I laughed with them, sang karaoke with them, built sand castles on the beach with them, and yes even cried with them my last night there (but probably not for the same reasons your thinking). I can’t wait till Madison graduates next year and we get to do it all over again!!

3. I have fallen in love with Edward Sharpe and The Magnetic Zero’s this summer thanks to my boyfriend. Check out their song HOME it is my fav! I have been blasting it on the iPod all summer.

4. When I was home a few weeks ago I found this book in our guest bedroom called What I Know Now: Letters to My Younger Self. It is a compilation of letters famous women wrote to their younger selves. It is very inspirational, for real. My favorite letter was from Maya Angelou. To give you a little background information she had got pregnant out of wedlock her senior year in high school. As soon as she graduated and had her baby she decided to leave her town and home and try to make it on her own. This is the letter she wrote to her younger self.  I think you probably have to be a girl to relate to this but I love it:

Dear Marguerite,

You’re itching to be on your own. You don’t want anybody telling you what time you have to be in at night or how to raise your baby. You’re going to leave your mother’s big comfortable house and she won’t stop you, because she knows you too well.

But listen to what she says:

When you walk out of my door, don’t let anybody raise you — you’ve been raised.
You know right from wrong.

In every relationship you make, you’ll have to show readiness to adjust and make adaptations.

Remember, you can always come home.

You will go home again when the world knocks you down — or when you fall down in full view of the world. But only for two or three weeks at a time. Your mother will pamper you and feed you your favorite meal of red beans and rice. You’ll make a practice of going home so she can liberate you again — one of the greatest gifts, along with nurturing your courage, that she will give you.

5. I started my new school 2 weeks ago. I felt like such a freshman again not knowing where anything was on campus and not even knowing how to print my notes offline (UCO does not use D2L unfortunately.) But I’m finally getting the hang of things. Luckily my friend Jamie from OSU made the move to UCO with them so I had at least one friend to start off with, and I am already starting to become good friends with the other girls in the program. I find out this week what hospital I will be working at in the fall and I’m really excited!!

6. Aaaaand last! The big news! My family has went crazy. Literally crazy, I have no idea what they are thinking. My parents decided that after 17 years of living in the same house it was time to do some remolding. Now that’s not the crazy part, I agree our house could use a little updating. We can’t live in the house while it is being remolded because of all the equipment and everything. So instead of moving into a rent house or hotel room or something like that they have decided to park the Cougar (pictured below) in our back yard and live in it for the estimated 4-5 months it will take to remodel the house. That’s the crazy part. 4 people. 1 camper. There is no way this won’t be interesting, so I am going to start blogging about the trials and triumphs of one family living in a camper that is smaller than my apt. Can’t wait!

So as most of you know I’m graduating from college exactly one month from today. On Monday I found out that I got accepted into the University of Central Oklahoma’s Dietetic Program. This is a semi-big accomplishment because they only accept around 10 people every year. I’m really excited for everything the future holds. I’m taking that next big step in reaching my future goals. I’m excited for the new friends I’m going to make, for finally getting to live in a city where there is a mall (even though I will be broke), and for getting to live only 25 minutes away from my boyfriend instead of an hour and a half. I’m also very excited to get to start my rotations at the hospital and clinics I will be at. It’s going to be really exciting to finally get some hands on experience. However leaving Stillwater is definitely a bittersweet feeling. Whenever I found out I got into UCO I was smiling and tearing up at the same time.  Everyone who goes to college here always says they miss Stillwater whenever they leave, but I never knew how much I would miss it until I found I was leaving.

Stillwater has been my home for the past 4 years now. Whenever I first moved here I hated this place, it defiantly took a few months to get used. But in the 4 short years I’ve been here I have really grown to love this town.  I’ve made so many new friends and great memories here, it feels like I’m leaving a little piece of me behind. Everyone knew that UCO was my first choice school, but I guess deep down I was kind of hoping my time at Oklahoma State wouldn’t really have to end yet.  But I guess we all have to leave sometime. As I start to prepare myself for making the transition from student to alumni I can’t get off my mind all the things I’m going to miss about being here. It’s like being a senior in high school all over again. I know everyone has their special things they love about this place, but here is what I am going to miss about Stillwater.

Someone brought it to my attention recently that my blog has gotten a little off track from the purpose I created it for. I admit that since spring break it’s been harder to keep up with my “Tuesday 10″ and “Weekly Wrap Up” segments. As many of you college students (or past college students) know, after Spring Break it gets way harder to stay on track. I feel that “summeritis” has creeped into my blogging abilities as well. I started this blog in the winter when there wasn’t much to do and it was snowing every other weekend, but since then the weather has improved 100% and there are just so many other things I would like to be doing. I’ve found that blogging is kind of like working out. Once you get in the routine it’s easy and fun, but the minute you skip a couple days it’s hard to get back to. Anyway on that note, I apologize for letting my blog get off track. Since I haven’t blogged in a while I feel like I have a lot I need to write about, but I’ll save that for another post. Today I’m just going to get back in routine and post my Tuesday 10. Maybe this will help me get back on track.

How is social media affecting your life?

Sounds like a simple question but when was the last time you went more than a day (or even two or three) without checking your Facebook or tweeting. Have you ever thought about how much impact the advertisements you see on Facebook or Twitter have on you? Or who you might or might not be friends with if you didn’t have Facebook.

I love Facebook. I think it’s a great way to keep up with friends. Just last week I was thinking about my friend Kristen who is spending the semester student teaching in Costa Rica. I had posted something on her Facebook wall then checked out her recently updated pictures. That got me to thinking about how I would communicate with Kristen if we didn’t have Facebook. Probably through e-mail. Ugh sounds so boring! It’s crazy how much we depend on Facebook to keep up with friends.

I think Facebook is awesome because you can look up just about anyone from your 6th grade teacher to your old college roommate and it’s a great way to stay in touch. Besides friends and family I can even stay up to date with my favorite businesses, politicians, photographers, Oklahoma State, and more! It’s a little creepy however how dependent we become on social media sites. Will our grandkids even have “real” friends? I can just picture a world where all kids go to school online and the only friends they have are on the internet. Instead of going outside to play at recess they will play with their Farmvilles and tweet each other.Ha maybe I’m wrong. Time will tell.

Sorry guys, the weekend update is being released on Thursday today. I got a little behind on my blogging with Spring Break. Hope everyone is having a good week!

America has reached a new low thanks to Donna Simpson

As I was watching TV with my boyfriend yesterday the story of Donna Simpson came on TV. Donna is from New Jersey and she weighs only 602 pounds. I say “only” because she has set a goal for herself to try to reach a weight of 1,000 pounds! Yes, you read that correctly. Donna wants to weigh half a ton. As I watched the story I was shocked, who in their right mind wants to weigh a 1,000 pounds?? The more I thought about it however, I started getting really mad. I’m not sure if it was because I’m a nutrition major and I’m going to school to stop problems like this, or just because I’m an American and the lady is making our country look stupid. Maybe you’re not as fired up as I am yet, but don’t worry the story doesn’t stop there. In order to reach her goal of weighing half a ton Ms. Simpson must consume 12,000 calories a day. For any of you who might not know it is recommended a normal, not crazy, person consume between 1,200 – 2,000 calories a day. Ms. Simpson is consuming more than 6 times her normal calories. As you can imagine this creates a pretty hefty grocery bill, an average of $750 a day. So how does Donna afford to eat to this much food? This is the real kicker. She has a website where she videos and takes picture of herself eating, and people can pay to watch!! Apparently more people are into watching fat people eat then I would have guessed because she doesn’t seem to be struggling to come up with food. Ugh, gag me. I want to throw up just looking at her picture I can’t imagine watching her eat. Unfortunately I have searched the internet far and wide and can’t find the link to her fat people porn page.

So here is where I get on my soapbox. First of all just let me state that I’m not trying to suggest obese people are the scum of the earth or anything. I’m a dietetics major, I know the struggles that come with weight, eating healthy, and exercise. It is one thing to be struggling with your weight, but gluttony is a sin. In the interview Ms. Simpson states that she “doesn’t believe in the dangers of obesity”? WHAT?!? I know this will sound mean but I can’t wait till she gets slapped in the face with cardiovascular disease, Type II diabetes, GERD, and hypertension just to name a few. In another interview with Donna it is estimated that once she develops diabetes (how has she not already?) medical bills a year just to treat the diabetes will average $11,744, to treat her other obesity related problems $1,429 a year, and every time she visits the emergency room $993. Here we are trying to reform America’s health care so that everyone can have coverage and this lady is doing everything she can to increase her medical bills. It really eases my mind to know my taxes dollars are going to be spent helping people with a mission of gaining 1000 pounds get health coverage. Uh huh. Not cool. I’m all for helping the less fortunate get coverage, but people like this deserve to be left out on their own. And don’t try to say she is the only person out there like this. America is the fattest country in the world, I guarantee you she is not the only one. And I also guarantee that since her story has gone public more people will follow in her footsteps. Everybody wants their 15 minutes of fame. I’m sure as soon as Donna Simpson reaches her goal (if she doesn’t die first) she will end up on The Biggest Loser and they’ll have their most successful season so far. Is this really the new low level America has reached?? People like this make me embarrassed to be an American.

Just this week my dad saw my signature, which was rather sloppy, and gave me a lecture about how a signature is something you should take pride in. It’s your name. It’s official. Your body is something else you should take pride in. I’m  not suggesting everyone needs to be model thin or super in shape, but you should be doing what you can to keep it healthy.

1 Corinthians 6:19 – Do you not know that your body is a temple of the Holy Spirit, who is in you, whom you have received from God? You are not your own.

Donna Simpson you disgust me, you need to be slapped in the face.
